United Cheesecake Holiday

This is from my good friend Siue Moffat. Siue has written a vegan cookbook called Lickin The Beaters
Hello All,

Since "Christmas" no longer works and since "Xmas" is sort of the same
thing just without the Christ I am celebrating United Cheesecake Day
instead. Officially United Cheesecake Holiday starts tomorrow, Dec
20th.
It runs until Dec 27th. UCH is the time of year where vegan and
nonvegan
cheesecakes can come together and celebrate their truely awesomeness.
While gifts are frowned upon, small things related to food are allowed
to be traded, especially if they have something to do with cheesecake.
Traditional cheesecake, frozen cheesecake dipped in chocolate,
cheesecake icecream - these are just a few things you can make during
the holiday. Chocolate, Cherry, Strawberry/Kiwi, Caramel Apple, Pumpkin
- they are all encouraged to mingle and pleasure the taste buds this
time of year.
So if you've had enough of "Mas"(s) perhaps you will consider making
UCH
a tradition in your house?

Here is a recipe for a cheap vegan cheesecake anyone can make:

chocolate chip tofu cheesecake

2 pks firm silken tofu
1 c sugar
1/2 c oil
1/4 c arrowroot starch mixed with 1/4 c soymilk
1 tsp almond extract
1 tb vanilla extract
1/4 c lemon juice
1/3 c chopped chocolate chips

chocolate cookie crust: 1 1/4 c chocolate cookie crumbs (sandwich
cookies are particularly good), 3 tb oil

1. Mix the ground cookies with oil and press into bottom of a
springform
pan. Bake at 375 d for 8 min.
2. Blend all the cheesecake ingredients well except the chocolate
chips.
Mix in the chips and pour into baked crust. Bake about 55 min. at 350 d
until the middle is very nearly set.
3. Cool and remove the spring form.

Unlike the cheesecake in my previous book, this one is very cheap to
make yet still tastes delish.

Christmas Time Is Here !

Oh the joys of Christmas ! Political clashes and debates over slogans and greetings !Merry Christmas ? uh I mean.... Happy Hanukah ?errr no I mean... Happy Kwaanza ? The parking lots of malls are filled to capacity. The simultaneous swipes of credit card sounds in the air. Santa's going to dress in drag this year. Poor Santa is confused and he doesn't want to offend anyone. I'm happy for everybody who celebrates something during this festive time of the year. It's a time to be with family and friends. It's a time to be merry, to eat, and drink. Talk about hang ups! Happy Everything to everybody geesh ! Party and find something really WORTH debating over.
